Check online reviews first! Before you visit the restaurant be sure it’s not designed primarily for tourists (avoid restaurants that have menus translated into several languages). Signs which indicate whether they serve genuine cuisine include things such as how they’ve cooked the rice – should be al dente rather than overcooked – what type ‘bomba’ is being used ((authentic Valencian-produced round-grain), presentation etc. Some places also display culinary awards and recognitions on their walls/certificates.
